8 plum or salad tomatoes, skinned, seeded and diced

Mix together the diced red onions, green peppers, chillies and garlic. Add the olive oil and the juice of 1 lime. Add the tomato flesh and stir in well to slightly break down the tomato flesh. Adjust the seasoning with a good pinch of salt.
The salsa should have a good balance of flavours. More lime juice may be needed to lift the other tastes. The salsa is now ready and can be kept in the fridge for a few days.
